Good body, acidity and a distinct hint of banana leads me to want to pair this beer with some fresh Northwest Chinook Salmon basted with a banana lime mojo, orange-passionfruit beurre blanc, and a black bean relish: the acidity of the beer easily matches the great richness of the salmon and the butter sauce, while the fruit notes in the sauces are complementary to the banana and clove in the beer. Finally, the black bean relish adds an earthiness that pulls the entire dish together.
