STORY

Our first venture into organically-produced beer, Mothership Wit Organic Wheat Beer elevates the zesty Wit or White beers of Belgium. Our far-flung Beer Rangers affectionately refer to our Fort Collins brewery as the Mothership, a name that conjures images of earth shot from space and the interconnectivity of it all. Mothership Wit is brewed with wheat and barley malt, as well as coriander and orange peel spicing resulting in a balance of citrus and sour flavors held in suspension by a bright burst of carbonation.

The spice of the cayenne offsets some of the sweetness of the wheat. The citrus zest and the crab pull out the wit spices, while the sweet medicinal saffron leeks round out and complement the yeasts.
Thai Vegetable Curry Melissa Newell, Owner of Terroir Restaurant, recommends: print recipe Thai Vegetable Curry I recently drank this beer paired with the most spectacular Thai vegetable curry at a dinner party. This aromatic beer full of citrus rind and coriander on the nose was a natural match. Spicy, but still sweet, with good weight and mouthfeel (it is unfiltered) you can pair this beer with several Asian or Middle Eastern dishes, savory and sweet. Other than the veg curry, for your main course, I would recommend falafel (puree of chickpeas, coriander, cumin, and various other spices), coriander crusted tempeh (pan sear the tempeh until browned in the smallest amount of balsamic vinager) served with mango papaya chutney, or Vietnamese spring rolls. For dessert, I would recommend a lemongrass consommé with coconut panna cotta. Pair with the more delicate flavors to bring out the nuances in this truly spectacular and complex beer.

The body of this Wit asks to be paired with cheeses that allow flavor without being too much of a mouthful. Emmentaler The Swiss cheese and Asiago are wonderful in that their body is mild but they have an undertone that allows them to compliment the orange and coriander combination in Mothership.
