Pumpkick Ale pumpkin loaf with Pumpkick glaze

Pumpkick Ale Pumpkin Loaf with Pumpkick Glaze

Makes two 9x5x3 inch loaves

1 15-ounce can of pumpkin puree
3/4 cup vegetable oil
2 1/4 cups sugar
4 eggs
2 teaspoons vanilla extract
2/3 cup Pumpkick Ale
3 1/4 cups all purpose flour
4 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 teaspoons kosher salt


Preheat your oven to 350 degrees. Grease and flour two 9x5x3 inch loaf pans (or cheat and use Baker's Joy like I do) and set aside.

In a large bowl (I use my KitchenAid mixer with the paddle attachment) mix together the pumpkin puree, oil and sugar until they are combined. Add the eggs, one at a time, mixing until incorporated and scraping the sides and bottom of the bowl after each addition. Add vanilla and Pumpkick Ale and mix until combined. Add the dry ingredients to the wet and gently mix until combined.

Divide the batter evenly between the two pans, smooth out the tops and bake for about one hour and 20 minutes, or until a toothpick inserted into the center of the loaf comes out clean. While the loaves are baking, you can make the optional glaze with the Pumpkick Ale, or drink the rest of the beer yourself...

Glaze

1 cup sifted powdered sugar
1-2 tablespoons Pumpkick Ale
1/4 teaspoon cinnamon (optional)

Pour the glaze over warm loaves, allow to set and then enjoy!
