Seared Scallops with Smoked Eggplant
To me, SKINNY DIP invokes grilled citrus notes as well as a little touch of hazelnut on the back side. The hops are not very aggressive but still let you know they are there. All and all this is a refreshing summer time beer, just perfect for finishing up a long single-track bike ride or a grueling trail run. As far as food pairing, I would cook up seared scallops to set atop roasted and smoked eggplant puree to enhance Skinny Dip's nutty characteristic. To brighten the hop citrus notes ~a little salad of arugula, cilantro, and pickled red onion dressed with grilled lemon and olive oil- these will work together for a refreshing finish.
