Skinny Dip

Ever tried a Skinny Dip? You wouldn't be alone. Featured by both Men's Journal and the Today Show as a favorite summer brew, this full-bodied, highly drinkable beer makes a splash every summer in our Seasonal line-up. Cascade hops frolic with a hint of lime leaf, giving the beer complexity that's surprisingly refreshing.
Skinny Dip has also become our mascot for water advocay. Why is New Belgium diving head first into water advocacy? For starters, water makes up over 90% of our beers. So, no fresh water means no great beers. And, living in the arid West, with a threatened river running through the middle of our town, water is an important regional issue for us, too. We believe that access to clean water is a basic human right. Responsible consumption means eliminating waste, returning clean water back to the water cycle, and protecting watersheds.

Smells like summer. Citrus rind on the nose with a healthy dose of hops on the palate make this light to medium bodied beer a must for steamed mussels with chorizo. While still light enough to not overwhelm the shellfish, its hops enable it to cut through the spice and texture of the chorizo. Don't forget the twist of lemon!
Don Pieratt, Cheese Monger at Chez Cheese Gourmet Market in Larimer Square, Denver, Colorado, recommends:
Skinny Dip does well with a number of cheeses due to its refreshing and mild character. First we brought out Idiazabal - Spanish sheep's milk, lightly smoked, nutty with hints of olive oil.
Next was Drunken Goat - a semi soft, not so tart, goat cheese from Spain.
We also found French Emmental and an American Pepper Jack did well with this lager beer.
