Before we go any further I would like to address the "taco issue" on this blog. I talk about them a lot, but that's because I love them. I eat them, literally, twice a week (at least). And but so it just happens that a lot (most) of the food and beer pairings I eat/write about are taco related… Some people may not share my love of this specific food, and that's OK (I guess), but I am going to talk about tacos anyway.
I also love beer (FYI).
And then, when tacos and beer come together, it is as if the warm sun is shining on me as I ride a magical horse towards the greatest dinner of all time. And that is where I went last night: fish tacos and Snapshot Wheat.
Let's go through it:
About a half an hour before cooking the fish I put together a cabbage slaw. I finely chopped half a head of red cabbage and half of a sweet onion. In the food processor I mixed the juice of one lime, two heaping tablespoons of sour cream, and two chipotles (the kind from a can, in adobo sauce). After tossing up the slaw I let it stand in the fridge until serving time. For the fish I used Talapia. I put some olive oil on the filets, followed by a light seasoning of oregano, cumin, chili powder, garlic, salt and pepper. A quick pan fry is all they required. As the fish cooked I chopped it up with a spatula, for the right consistency. I garnished the tacos with cilantro, cotija, chopped avocado and a little lime for squeezing. The whole she-bang was served up on corn tortillas. Here's the view:
And then the Snapshot. This beer is an unfiltered wheat that drinks refreshing and finishes tart. Smile-inducing aromas of citrus hops jump from the nose, accompanied by the sweetness of Coriander and Grains of Paradise. Brewed with wheat and pale malt, Snapshot pours a hazy, lemon-yellow with bright-white lacing. But the real enticement is the snap of tart. New Belgium’s affinity for sour beers led to the in-process blending of lactobacillus to pucker up Snapshot’s base. An extra step to acidify and beautify and get this beer ready for its close up.
Most of the paragraph above was stolen from our sell sheet for the beer (it's cool, I wrote that, too). The words are kind of gussied up, but the message is clear, Snapshot is a tart wheat beer that's easy drinking and awesome. And that's what makes the pair so great. The delicate nature of the white fish comes together very well with the easy nature of Snapshot. The tartness in the beer sings with the citrus in the tacos. And the slightly hot, and mouth-coating, quality of the slaw was washed away with Snapshot's dry finish.
