How to pair Fat Tire with (almost) anything

As an amber ale, Fat Tire is about as balanced a beer as you’ll find. Sure, that makes it an easy (and tasty) beer to knock back, but it also means that Fat Tire is one of the most agreeable beers to pair with food. With its balance of sweet malts and bitter hops, as well as its nuanced blend of caramel, biscuit and herbal flavors, it’s difficult to find a dish that doesn’t wash down well with Fat Tire. Pairing beer with food can seem mysterious at first, but while it’s a bit more complicated than wine and food due to beer’s wide scope of flavors, it’s really not that hard. There are just a few things to consider when working out a great pairing. The two classic approaches to pairing bee...

Introducing the New Belgium Porch at Colorado State’s football stadium

New Belgium and Colorado State University have some pretty deep ties. A big chunk of New Belgium co-workers (including our founder Kim Jordan) attended the university. New Belgium partners with CSU to store a collection of our house yeast strains. Plus, Kim Jordan and New Belgium teamed up to donate $1 million to CSU’s Fermentation Science and Technology program. We love Colorado State (go Rams!). Our next chapter together is about to unfold as we’re officially announcing today a donation of $4.3 million to CSU’s on-campus stadium project. From the press release: “New Belgium Brewing continues to be such a tremendous supporter of Colorado State University across the board,” said Brett An...

The secret origin of New Belgium’s sour beer program

Unknowingly sending infected beer into the market is the stuff of nightmares for a brewer. Reputation, pride, customer loyalty, money—it’s all at stake. But what if a returned keg of infected beer permanently changed the course of a brewery for the better? It might just be a bit of folklore, but according to New Belgium legend, that’s exactly what happened at the brewery. Our wood cellar program, the largest in the country, owes a great deal of gratitude to a returned keg of infected Fat Tire, and to this day, the spirit of Fat Tire lives on in every wood-aged New Belgium sour you drink, if you choose to believe it. This little-known story begins way back in 1998. Brewmaster Peter Bouckaer...

The art of blending sour beers

If brewing is a science, then blending is an art. With a few exceptions, all of the sour beer brands that leave New Belgium's door are a blend of beer from various French oak foeders in our wood cellar. That means for each release, wood cellar manager Eric Salazar and wood cellar blender Lauren Salazar sit down with samples from our 64 foeders to decide which should be included in the final blend. The result is a deeply complex, layered flavor and aroma profile that's come to define our entire lineup of sours. Watch as the two explain how that process works. Check out New Belgium's entire sour beer portfolio.

Flowering Citrus Ale is in bloom, get it today

Our second Lips of Faith four-pack collaboration has finally arrived, and we can’t wait to share this new beer with you. Called Flowering Citrus Ale and brewed with our pals at Belgium’s De Koninck, it is, perhaps, one of the most elegant beers we’ve brewed to date. To celebrate our 25th anniversary, each Lips of Faith release this year is a collaboration with a Belgian brewery that holds a special place in the heart of New Belgium. So what’s the story with De Koninck? Here’s what New Belgium’s brewmaster Peter Bouckaert has to say: “The brewery that brews De Koninck (old Flemish for “the king”), the inspiration for Fat Tire! We had to work with them for our 25th anniversary. Michel Moor...
