The art of blending sour beers

If brewing is a science, then blending is an art. With a few exceptions, all of the sour beer brands that leave New Belgium's door are a blend of beer from various French oak foeders in our wood cellar. That means for each release, wood cellar manager Eric Salazar and wood cellar blender Lauren Salazar sit down with samples from our 64 foeders to decide which should be included in the final blend. The result is a deeply complex, layered flavor and aroma profile that's come to define our entire lineup of sours. Watch as the two explain how that process works. Check out New Belgium's entire sour beer portfolio.

Watch: Critters of the wood cellar

Ever wonder exactly what's going on inside our giant French-oak foeders that turns regular beer into fruity, tart deliciousness like our flagship sour La Folie? We sat down with New Belgium blender Lauren Salazar to discuss a bit of the science behind wood-aged sour beers.

Flowering Citrus Ale is in bloom, get it today

Our second Lips of Faith four-pack collaboration has finally arrived, and we can’t wait to share this new beer with you. Called Flowering Citrus Ale and brewed with our pals at Belgium’s De Koninck, it is, perhaps, one of the most elegant beers we’ve brewed to date. To celebrate our 25th anniversary, each Lips of Faith release this year is a collaboration with a Belgian brewery that holds a special place in the heart of New Belgium. So what’s the story with De Koninck? Here’s what New Belgium’s brewmaster Peter Bouckaert has to say: “The brewery that brews De Koninck (old Flemish for “the king”), the inspiration for Fat Tire! We had to work with them for our 25th anniversary. Michel Moor...

Road trip: 8 rad waterfront bars

FishHead's Bar & Grill in Nags Head, N.C. Sometimes it’s not just about the beer, but the setting (but it’s also always about the beer). To celebrate the summer season, which means outdoor drinking, we asked New Belgium Beer Rangers across the country to hit us up with their favorite waterfront bars. Hitting the road this summer? Pair a pint with amazing views at these rad bars. The Raven Brewpub & Grill Woods Bay, Mont. “Life is better on the lake,” say the owners of this remote Montana bar, situated on the banks of Flathead Lake, just 40 minutes south of Glacier National Park. This breezy bar’s Caribbean theme pairs with beautiful lakeside views, while dishes like Pad Thai, Baja Fis...

How to pair your burger with New Belgium beers

It’s summertime, which means it’s grilling season (which also means it’s drinking outside season). Nothing screams lazy summer afternoon more than kicking it in your backyard with friends, flipping burgers on the grill, and knocking back some beers. This summer, up your grill game by nailing the perfect burger and beer pairings, one topping at a time. Here’s how: START WITH: The classic: Tomato, lettuce and onions Beer: Fat Tire Amber Ale Why: Classic meets classic. Fat Tire’s sweet, biscuity malts draw out the inherent sweetness in the burger and bun, while the beer’s grassy bitterness cleans up each bite and sip. Meanwhile, the tomato’s umami draws out similar notes hidden deep in th...

Make this: The best burger we've ever tasted

We love burgers. Yep, burgers are pretty swell. But, we recently discovered a burger to end all burgers, and now it’s the only burger we ever want. Allow me to introduce you to the Bacon Jam Burger from local Fort Collins favorite food truck The Tramp About. You can always find The Tramp About outside our Liquid Center on Fridays (sometimes they’re here on Tuesdays, too), where they serve up gourmet street tacos, po’boys, Cubano sandwiches and a rotating selection of burgers. The Bacon Jam Burger is heavenly. Made with tomato-bacon jam and jalapeno aioli it’s absolutely packed with flavor. Pro-tip: Pair it with a hoppy Citradelic Tangerine IPA, or draw out the burger’s darker flavors with ...

How to drink through the Fat Tire & Friends pack

We really wanted to do something special in celebration of New Belgium’s 25th anniversary, so we got together with friends from five different breweries, gave them the keys to the Fat Tire recipe, and said, “Surprise us.” The result is Fat Tire & Friends, a collaborative variety pack featuring five unique spins on the original fave, plus a couple bottles of Fat Tire for good measure. This is the wildest pack we’ve ever released, and probably the wildest variety pack of the year. There’s Avery Fat Wild Ale (brewed with Brettanomyces Bruxellensis Drie), Allagash Fat Funk Ale (bottle conditioned with Brettanomyces Allagagensis), Hopworks Fat Sour Apple Ale (brewed with Lactobacillus and apple...

We're brewing another beer with Ben & Jerry's

It's true! We're teaming up again with fellow B-Corp pint-makers (see what I did there?) to make a follow-up beer to last year's Salted Caramel Brownie Brown Ale. What's this year's flavor? Chocolate Chip Cookie Dough Ale, and it's deliciously decadent. There's much more to come on the beer, which is scheduled to hit shelves and taps this fall, so in the  meantime, give our press release a read: New Belgium Brewing and Ben & Jerry’s are teaming up once again to create a new ice cream inspired beer while raising awareness about climate change. Inspired by one of Ben & Jerry’s smash hits, New Belgium has developed Chocolate Chip Cookie Dough Ale, a special release beer to hit the shelves in t...

Ediza Ferris, a cruiser bike and a lot of pizza

Back in the summer of 2015 we ran a little competition called #MakeNicZag. We asked Fat Tire drinkers to send in interesting and/or quirky activities for Nic (former intern and the person currently writing this blog) to complete while riding a New Belgium cruiser bike. We then chose our favorite — which ended coming from Ediza Ferris — and gave her a bike. Ediza, who embodies the word "awesome," brought her idea to life. Watch the video to see what we mean... Much thanks to Ediza for coming up with the idea and making it happen. Check out her blog at www.healthygirlfashion.com (and big shout out to Flux Capacitor on the video work).

New Belgium and Dick Cantwell team on Ales for ALS

Dick Cantwell is a brewing legend, so when he decided to brew his first post-Elysian acquisition beer in our pilot brewery, we were obviously excited. Cantwell worked with our pilot brewers on this year's version of Ales for ALS, a charity brew that benefits research on ALS (commonly known as Lou Gehrig's disease).  We caught up with Cantwell to chat the beer and his new book — "Wood & Beer: A Brewer's Guide" — which he co-authored with New Belgium Brewmaster Peter Bouckaert. Check out our interview below.
