Fall Wild Ale

Fall Wild Ale, our mahogany-hued autumn ale spiced with schisandra, opens with the floral, earthy notes of fall itself. Schisandra berries, known as "five flavor fruit," possess a panoply of flavors . This malt-forward dubbel ale is fermented with a Trappist yeast and finishes dry and slightly sour from a touch of bretta.

Aroma

 Notes of banana, clove and pink bubblegum- quintessential of the trappist yeast strain used. The malt bill brings to mind toffee, caramel, brown sugar, and bittersweet chocolate

Flavor

Spiced with Schisandra, known as the 5 flavor fruit because it tantalizes the taste buds with sweet, sour, salty, bitter and pungent (spicy) flavors. Finishing this beer with Brettanomyces, gives notes of farmhouse or tropical fruit notes.

Mouthfeel/Body

The beer opens sweet and creamy finishes warm and peppery.Full, clean finish Medium - Full
