Introducing Essential One, a foeder-aged American Sour blended with crisp apples, balanced by the warm spice of palo santo. This beer is inspired by the beautiful and complex aromatics of Palo Santo. Palo Santo, which translates to "holy wood," is traditionally burned and is believed to have the power to purify and clear bad energy. Our love for the aroma inspired us to utilize it in a different elemental state and see what happens when you infuse.

We discovered the warm and calming aromas of palo santo are cooling on the palate, with flavors of sweet wood, eucalyptus, and warm spice in your glass. To compliment those notes, we created a base of light and dark foeder-aged sour beer and then refermented that with apples.

Combining that with the sweet-subtle notes of apple cider enhances the complexity of the palo santo, resulting in a slightly sweet, fruited, well-balanced sour beer.
